Chicken vs. Beef and Pork
Thursday, September 15, 2005

Over the past twenty years or so, scientists and health professionals have proven time and again that eating a lot of beef or pork can be too much of a good thing. Each of these sources of food, individually, has many benefits. They contain vitamins and minerals, as well as being a good source of protein. Beef and pork, however, are full of saturated fats that can ultimately cause heart disease. Also, they are both some of the hardest foods to digest. A good substitute for beef and pork is the old stand by: chicken. Chicken has much less fat than beef or pork and it is much easier to digest. Plus, chicken can be served in a variety of ways that competes with the favorite recipes that include beef and pork.

You may notice in grocery stores today that chicken can be bought ground up just like hamburger meat. This ground chicken can be used in any recipe that calls for ground beef; for instance spaghetti or other pasta and meat sauces, taco mixes, and chili. Ground chicken can even be formed into patties, grilled, and eaten as chicken burgers. Ground chicken can be used with hamburger helper or any other hamburger specialty. Try using ground chicken next time and see how you like it.

Chicken can be thrown on the grill just like a steak or hamburger. Chicken breasts are very tasty when grilled, and while many sauces, marinades and toppings can be added, sometimes just a little salt and pepper gives chicken breasts or thighs just the right touch.

An all-time American favorite is fried chicken. Much like the Colonel's recipe, we can make fried chicken at home. This may not be a replacement for beef, but fried pork is very popular. Plus, the beef lovers like fried chicken so much that they invented chicken-fried steak! Although fried foods aren't the healthiest way to go, if you do decide to eat something deep fried, make sure it's chicken.

Another popular American meal (adapted from our Asian neighbors) is beef stir fry; yet as many of us already know, chicken stir fry is just as tasty and healthier in the long run. Simply slice up a few chicken breasts and stir them up on a frying pan. Once they're almost fully cooked, add a mixture of your favorite vegetables, and voila, chicken stir fry.

Perhaps the easiest way of all to cook a chicken is to simply buy a whole chicken and put it into the oven, intact. This is perhaps the biggest difference between preparing beef, pork, and chicken. While putting an entire pig on a spit over a fire is still popular, cooking the entire cow at once is simply not done. Chicken is the most popular meal that can come out of the oven whole, intact, and ready to eat. And the best part is, it only needs minimal seasoning and it comes out tasting wonderful; not only that, it makes the entire house smell good.

So how about it - will you be making chicken tonight?
